How to cook White Sweet Potatoes


















Roasted White Sweet Potato Recipe



Ingredients

·         2 large white sweet potatoes

·         1/4 cup extra-virgin olive oil

·         1 fresh sprig of rosemary

·         2 cloves garlic, smashed

·         Himalayan pink salt, to taste

·         water as required

Instructions

1.    In baking, tray place washed dried whole white sweet potatoes and added water so that the surface of the tray is covered.

2.    Place the baking tray in a preheated oven at 350-degree F for about 25-30 minutes or until the potatoes are soft. Make sure the potatoes are soft from the outside. They should be semi-cooked.

3.    Once they are cooked halfway through, remove them from the oven and let them cool.

4.    Cut the white sweet potatoes into wedges and place them in a large bowl.

5.    In a frying pan, add olive oil, smashed garlic, and fresh rosemary spring.

6.    Place the frying pan on low heat.

7.    Once the oil becomes fragrant, remove the pan from heat.

8.    Pour the oil into a small bowl and let it cool.

9.    Once the potato wedges are cool, add two tablespoons of garlic and rosemary oil, rosemary spring, and a pinch of pink Himalayan salt and mix well.

10. Grease the baking tray by brushing garlic-rosemary oil on it.

11. Place potato wedges on the baking tray skin-side down.

12. Place the baking tray in a preheated oven at 425-degree F for 30 minutes or until the white sweet potatoes start getting a golden-brown color.

13. Remove the tray from the oven and serve.



Mashed White Sweet Potatoes



These creamy  Mashed White Sweet Potatoes (mashed Boniato), are fluffy, sweet, and flavorful, the perfect side dish for weeknight dinner or a holiday meal. Sweet Potato boiled until tender, mashed with vegan butter and roasted garlic will definitely be a family favorite.

 

Ingredients


Instructions

1.    Scrub sweet potatoes and peel with a sharp knife, cut potato into large chunks.

2.    Place chunks into a large pot with cold water to cover sweet potatoes and bring to boil on high heat. 

3.    Reduce heat to simmer, cover the pot and cook for about 20 minutes or until sweet potatoes are tender and soft

4.    Remove from the heat and drain liquid using a colander. 

5.    Transfer sweet potatoes to a bowl, add vegan butter, roasted garlic,  non-dairy milk and salt to taste. 

6.    Mash potatoes until smooth and creamy using a potato masher or a fork. 

7.    Garnish with green onions and serve immediately.



 

Spicy Mashed White Sweet Potatoes

  • 2 pounds white sweet potatoes

  • Salt, to taste

  • 3 tablespoons melted butter, salted or unsalted

  • Freshly ground black pepper, to taste

  • 1/4 cup whole milk, warm

  • 1 chile pepper, minced

  • 1/4 cup sliced green onions, white and green parts

Steps to Make It

  1. Gather the ingredients.

  2. Peel the sweet potatoes and cut them into large pieces.

  3. In a large pot, place the potatoes, cover with water, and bring the pot to a boil over high heat.

  4. When the pot comes to a boil, salt the water, and let the sweet potatoes cook until a knife inserts easily into them, about 20 minutes.

  5. Drain the sweet potatoes thoroughly.

  6. Add the drained potatoes back into the still-hot pot along with the butter, pepper, and milk. Mash the potatoes until they are smooth. Season with the chile pepper and salt to taste. Mix well.

  7. Fold in the green onions.

  8. Serve immediately and enjoy.

Tips

  • Your mashed white sweet potatoes can be part of a Caribbean feast or family dinner. A baked or roasted chicken breast with Caribbean jerk seasoning would be a good accompaniment, as would pork chops.

  • Besides enjoying them again as mashed potatoes, you can use them in a variety of ways. Top a shepherd's pie made with meat, vegetables, or lentils with the leftovers. You can also form them into potato patties adding vegetables, flour, and egg (or egg replacer), and fry them to make a great breakfast dish or appetizer to serve with dip or chutney.

Recipe Variations

  • For vegan mashed white sweet potatoes, use a milk alternative or broth, and replace the butter with vegan-friendly margarine.

  • To make the sweet potatoes richer, use half-and-half or light cream instead of milk.

  • To reduce the heat, replace the hot chile pepper with a few tablespoons of minced red bell pepper.

 

  

 

 

PAN FRIED CRISPY WHITE SWEET POTATO

INGREDIENTS

·         2 medium Japanese white sweet potatoes

·         2–3 tbsp avocado oil

·         Salt & pepper (omit pepper for AIP)

·         1 tsp garlic powder (optional)

·         Flakey salt (optional)

INSTRUCTIONS

1.    Wash and peel the sweet potato, and chop into uniform cubes.

2.    Using a large, deep skillet, heat over medium-high heat and add 2 tbsp of oil. Once the oil is shimmering, carefully add the sweet potato.

3.    Cook the sweet potato for 8-10 minutes, stirring often to avoid burning and evenly cooking the sweet potatoes. Rotating them often is key to getting them crispy. Lightly salt the sweet potatoes midway through the cook time and add pepper and garlic powder if desired. Add an extra tablespoon of oil during cooking if needed.

4.    Once the sweet potatoes are crisp, remove from the heat and serve topped with flakey salt if desired.
