E1 – Smothered Chicken w/ Potatoes, Carrots, Onions & Celery

 

 

Ingredients

·         3 tbsp olive oil

·         2 tbsp ghee

·         4 boneless, skinless chicken breasts

·         Salt and pepper (to season chicken)

·         1/2 cup all-purpose flour + 2 tbsp (separated)

·         10 baby potatoes (halved, pre-boiled until almost cooked)

·         1 medium chopped onion

·         1 medium carrot (peeled and chopped)

·         1 to 2 tender celery stalks (chopped)

·         2 tsp minced garlic

·         2-3 sprigs of fresh thyme (removed from stems)

E2 – Vegan Potato Kale Soup


 


Ingredients

  • 2 Tablespoons olive oil

  • 1 medium-large onion, diced

  • 4 garlic cloves, diced

  • 1/4 teaspoon freshly ground black pepper

  • 1/4 teaspoon Himalayan sea salt

  • 6 cups low-sodium vegetable broth, such as Pacific Foods brand

  • 1-1/2 pounds medium potatoes, quartered then cut into 1/4-inch thick slices

  • 2 large carrots, cut into 1/4-inch thick slices

  • 1/2 to 3/4 pound lacinato kale (or another variety) tough stems removed, then chopped

  • 1 15-ounce can cannellini beans (do not drain), no salt added, such as Eden Foods brand

  • Chopped parsley for garnish, optional

E3 – Crock Pot Pork Roast, Potatoes & Carrots

 

 

Ingredients:

·      2 lbs boneless pork loin roast

·      1 teaspoon paprika

·      12 teaspoon cayenne (red pepper)

·      1 tablespoon garlic powder

·      12 teaspoon oregano

·      34 teaspoon salt

·      14 teaspoon black pepper

·      4 medium potatoes, peeled and cubed (1 inch cubes)

·      2 cups baby carrots

·      2 cups chicken broth

S1 – Kale w/ Celery, Apple, & Carrot

 

 

Ingredients  

·         1 Granny Smith apple, diced

·         3 carrots, peeled and diced

·         3 stalks of celery, sliced

·         Half of a white onion, diced

·         half a bunch of kale leaves, trimmed from the stalks and finely shredded.

·         2 tbsp olive oil

S2 – Olive Oil Braised Celery w/ Potatoes & Carrots

 

 

 

Ingredients

·         head celery, small if possible

·         2 medium russet potatoes or 3-5 waxy potatoes

·         I medium yellow or white onion

·         1 large carrot

·         1-2 garlic cloves

·         1/3 cup/80 ml olive oil

·         2 tablespoons fresh lemon juice

·         2 teaspoons salt

·         water, to cover

S3 – Honey Butter Skillet Corn

 

 

Ingredients

·         3 tablespoons butter

·         2 tablespoons honey

·         16 ounce bag frozen "gold and white" bi-color corn, (see note below)

·         1/4 cup finely diced onion

·         1 small jalapeño, , ribs and seeds removed, minced

·         2 ounces cream cheese, , room temperature, cut into chunks

·         1/2 teaspoon coarse salt

·         1/4 teaspoon freshly ground black pepper

S4 – Traditional Greek Potatoes & Celery Cooked in Olive Oil

 

 

Ingredients 

·         1 pound potatoes cut in 1 ½ inch pieces

·         ½ cup olive oil

·         1 cup (or more) of chopped celery leaves

·         1 heaping tablespoon of tomato paste

·         1 pinch of sugar

·         ½ teaspoon salt

·         pepper

S5 – Potato & Carrot Layer Bake

 

 

 

Ingredients

·         26½ oz potatoes, or thereabouts (approx. 5 medium potatoes)

·         8¾-10½ oz carrots (4-5 medium carrots)

·         1 small onion

·         2 tbsp olive oil

·         0.85 cups hot vegetable or chicken stock

S6 – Best Potato Salad

 

 

Ingredients

§  2 pounds Yukon Gold potatoes, cut into ½-inch pieces

§  ¾ cup mayonnaise

§  2 tablespoons dill pickle brine

§  1 tablespoon apple cider vinegar

§  1 tablespoon yellow mustard

§  2 garlic cloves, grated

§  1 teaspoon sea salt

§  Freshly ground black pepper

§  2 celery stalks, diced

§  ½ cup diced dill pickles

§  ½ cup chopped fresh chives

§  2 tablespoons chopped fresh dill

§  2 hard-boiled eggs, peeled and chopped, optional

D1 – Healthy Cinnamon Apple Banana Bread

 

 

Ingredients

·         2 cups (240g) whole wheat flour or gluten free* flour (measured like this)

·         1 tsp baking powder

·         ½ tsp baking soda

·         1 ¼ tsp ground cinnamon

·         ¼ tsp ground nutmeg

·         ¼ tsp salt

·         ½ tbsp (7g) unsalted butter or coconut oil, melted and cooled slightly

·         2 large egg whites, room temperature

·         1 ½ tsp vanilla extract

·         ¼ cup (60g) plain nonfat Greek yogurt

·         ¾ cup (200g) mashed banana (about 2 medium – see Notes!)

·         2 tbsp (30mL) pure maple syrup (see Notes!)

·         ¼ cup (60mL) nonfat milk

·         1 ⅓ cups (167g) finely diced apple

·         1-3/4 c. honey

·         4 T. lemon juice, divided

·         2 ripe bananas

D3 – Healthy Apple Crisp (Low-Carb, Gluten-Free, Dairy-Free)

 

 


 

Ingredients 

§  3 cups apples chopped into 1/2 inch pieces (cortland, honeycrisp, gala and golden delicious all work well in this recipe - leave the skins on for a little extra fibre). 

§  2 tbs monk fruit sweetener / coconut sugar / brown sugar (or whatever granulated sugar that you have on hand) 

§  Juice from 1 medium lemon 

§  2/3 cup thick rolled oats 

§  1/3 cup coconut flakes or coconut chips 

§  2 tbs maple syrup or benisweet 

§  2 tbs cinnamon 

§  1/2 cup coconut oil (room temperature or slightly softened) 

§  1/2 tsp sea salt
