E1 – Greek Green Beans Baked With Chicken & Potatoes

Ingredients
· 2 pounds fresh green beans washed and trimmed
· 4 chicken thighs skin on, bone in
· 4 chicken drumsticks skin on
· 1 lemon
· 1 tsp salt
· 1/4 cup vegetable oil approximately, for frying
· 1/4 tsp pepper
· 4 medium potatoes peeled and cut into thick wedges
· 2 cups tomato sauce
· 3/4 cup olive oil
· 1/4 cup water

E2 – Potato & Carrot Rosti with Spinach, Peas, & Eggs

Ingredients
· 4 large potatoes grated
· 4 medium carrots grated
· 6 spring onions finely sliced
· 1 teaspoon Dijon mustard
· Juice of ½ lemon
· Extra-virgin olive oil for dressing
· Olive oil
· ¾ cup frozen peas
· 2 cups baby spinach
· 4 free range eggs
· Persian feta cheese

E3 – Spinach Stuffed Portobello Mushroom

Ingredients
· 2 tablespoons extra virgin olive oil
· 1 tablespoon balsamic vinegar
· 2 cloves garlic, pressed
· 4 large portobello mushroom caps
· 10 ounces frozen chopped spinach, defrosted and excess water removed
· ½ cup Parmesan cheese, divided
· 2-3 tablespoons heavy cream
· 1 cup shredded mozzarella cheese
· Coarse kosher salt and freshly ground black pepper

S1 – Creamy Spinach & Rice Stuffed Portobellos

Ingredients
· 2 large portobello mushrooms
· 1 Tbsp butter melted
· 1 tsp olive oil
· 1 tsp minced garlic
· 2 handfuls fresh baby spinach
· 1/3 cup light sour cream
· 1/3 cup grated Parmesan cheese
· 1 cup US grown brown rice cooked
· salt and pepper to taste
· 1/4 cup Monterrey jack cheese

S2 – Potato, Kale, & Corn Gratin

Ingredients
· 1 large or 2 small purple or red potatoes, chopped small (about 0.4 lb.)
· 1 teaspoon olive oil
· About 0.4 lb. of kale (6 – 8 ribs), yielding roughly 4 cups chopped kale
· 1 Tablespoon butter (or olive oil)
· 1 carrot, peeled & chopped
· 2 – 4 cloves garlic, peeled & chopped
· 1 1/2 cups frozen corn
· 1/2 teaspoon each: Red Robin Seasoning (or your favorite seasoned salt) and Trader Joe’s 21 Salute Seasoning (or your favorite non-salt seasoning mix) (or to taste)
· Freshly ground black pepper, to taste
· 4 oz. mixed finely shredded cheese (I used a mix of Swiss and Italian cheeses)
· 1/2 cup or more of alfredo sauce (regular or cauli-fredo – recipe here)
· 1/4 cup whole milk
For the crumb topping:
· 1/2 cup breadcrumbs or crushed Rice Chex (use Rice Chex for extra crunch and GF)
· A sprig of each: fresh rosemary and tarragon, finely chopped
· 1 oz. finely shredded parmesan or romano cheese

Ingredients
· 12 ounces green beans (trimmed)
· 12 ounces carrots (cut into 3 inch segments, cut in half or quartered if necessary, about 3-4 medium sized carrots)
· 1 tablespoon
· ½ teaspoon dried tarragon
· ½ teaspoon dried thyme
· ½ teaspoon garlic powder
· ¼ teaspoon red pepper flakes (optional)
· Salt and pepper to taste

S4 – Warm Green Bean Salad with Crispy Potatoes & Feta

Ingredients
· 1½ lbs Yukon gold potatoes, halved or quartered into ¾-1" pieces
· ½ tsp baking soda
· 2 Tbsp extra virgin olive oil
· 1 lb green beans, trimmed, any variety
· ½ small red onion, thinly sliced into half moons, about ¼ cup
· ⅓ cup Kalamata olives, pitted and halved
· ⅓ cup Feta cheese, crumbled
· Kosher salt
· Freshly ground black pepper
For the salad dressing
· ½ cup extra virgin olive oil
· 1 medium lemon, juiced, about 2 Tbsp
· 1 Tbsp fresh oregano, finely chopped
· 1 Tbsp chives, thinly sliced, plus more for serving
· 1 small clove garlic, finely chopped
· 1 tsp honey
· 1 tsp Kosher salt
· ¼ tsp freshly ground black pepper

· 1 small head of cabbage, shredded
· 1 cup of green beans, trimmed and chopped
· 2 medium carrots, peeled and sliced
· 1 onion, finely chopped
· 2 cloves of garlic, minced
· 2 tablespoons of olive oil
· 1 teaspoon of cumin powder
· 1 teaspoon of paprika
· Salt and pepper to taste
· Fresh parsley for garnish

Ingredients
· 6 portabello mushrooms
· 2 yellow, red or orange peppers
· 4 shallots
· 4 cloves of garlic
· 1 large carrot
· 1 handful parsley chopped
· 6 tablespoons olive oil
· 1 teaspoon salt

D1 – Easy Banana Apple Bread

Ingredients
For the bread:
· 2 cups all-purpose flour you could use ½ whole wheat or sub in gluten-free 1-1 flour to make GF
· 1 teaspoon baking soda
· 1 teaspoon baking powder
· ¼ teaspoon salt
· 1 cup mashed bananas (3-4 very ripe)
· 2 eggs
· ½ cup pure maple syrup or you could use organic cane, or coconut sugar, if you like
· ½ cup applesauce
· ½ cup coconut oil melted
· 1 teaspoon vanilla extract
Cinnamon-apple mixture:
· 2 medium sized apples peeled, cored and chopped
· ½ cup sugar I used organic cane, but use coconut sugar, if you like
· 2 tablespoon coconut oil melted
· 2 teaspoon cinnamon

Ingredients
· 1 cup (210g) thinly sliced Fuji apple, between ⅛” to ¼” thick (about 1 large)
· 1 ¾ cups (210g) white whole wheat or gluten-free* flour (measured like this)
· 2 tsp ground cinnamon
· ½ tsp ground nutmeg
· 1 ½ tsp baking powder
· ½ tsp baking soda
· ½ tsp salt
· 1 tbsp (14g) unsalted butter or coconut oil, melted and cooled slightly
· 1 large egg (room temperature)
· 1 tbsp (15mL) vanilla extract
· ½ cup (120g) plain nonfat Greek yogurt
· ½ cup (120mL) pure maple syrup
· 6 tbsp (90mL) nonfat milk

Ingredients
· 2 cups white whole wheat flour or gluten-free flour
· 1/2 teaspoon ground cinnamon
· 1 1/2 teaspoons baking soda
· 1/2 teaspoon kosher salt
· 3 bananas ripe
· 1/2 cup vanilla or plain greek yogurt
· 1/3 cup pure maple syrup
· 1 teaspoon vanilla extract
· 1 tablespoon coconut oil melted and slightly cooled
· 1 egg room temperature
Coconut Whipped Cream
· 2 14 ounce cans full fat coconut milk
· 8 tablespoons honey agave or maple syrup
· 1 teaspoon vanilla extract
